Chopped Summer Chicken Salad Recipe

This chopped chicken salad is a great way to bring all the flavors of spring and summer to your table. It makes a great, fresh lunch or snack on the go.

1 case, thawed                                            Tyson® All Natural,* Low Sodium, Fully Cooked, Reverse Blend, ½" Diced Chicken
3/4 cupPaprika
3/4 cupGarlic Powder
to tasteSalt & Black Pepper
2 cupsOlive Oil

5 lemons            Lemon Juice - Freshly Squeezed
1 cupExtra Virgin Olive Oil
A Pinch Red Pepper - Crushed
To taste Salt & Fresh Black Ground Pepper

3 headsLettuce, - Chopped
4 ea.Cucumber - Sliced
4 ea.Avocado - Sliced
3/4 cupRed Onions - Sliced
3/4 cupBacon - Chopped
Directions

Step 1:  Prepare the chicken as directed on the package, adding paprika, garlic powder, salt, black pepper and olive oil during the cooking process.

Salad Dressing

Step 1: In a mason jar, pour the lemon juice, olive oil and add salt and black pepper. Whisk everything together until combined.

Step 2: Taste to check the seasoning and set aside. 

Salad

Step 1:  Combine the chopped lettuce, sliced cucumbers, avacados, red opinio and chopped bacon.

Step 2:  Toss until mixed.   Add salad dressing and toss the salad until mixed.
