Chopped Summer Chicken Salad Recipe

This chopped chicken salad is a great way to bring all the flavors of spring and summer to your table. It makes a great, fresh lunch or snack on the go.

Ingredients

1 case, thawed                                            Tyson® All Natural,* Low Sodium, Fully Cooked, Reverse Blend, ½" Diced Chicken
3/4 cupPaprika
3/4 cupGarlic powder
to tasteSalt and black pepper
2 cupsOlive oil

AMOUNTMAIN INGREDIENTS
5 lemons            Lemon juice, freshly squeezed 
1 cupExtra virgin olive oil 
A Pinch Red crushed pepper 
To taste Salt and fresh ground black pepper

AMOUNTMAIN INGREDIENTS
3 headsLettuce, chopped
4 ea.Cucumber, sliced
4 ea.Avocado, sliced
3/4 cupRed onions, sliced
3/4 cupBacon, chopped
Directions

Step 1.  Prepare the chicken as directed on the package, adding paprika, garlic powder, salt, black pepper and olive oil during the cooking process.

Salad Dressing

Step 1.  In a mason jar, pour the lemon juice, olive oil and add salt and black pepper. Whisk everything together until combined.

Step 2. Taste to check the seasoning and set aside.

Step 1.  Combine the chopped lettuce, sliced cucumbers, avacados, red opinio and chopped bacon.

Step 2.  Toss until mixed.   Add salad dressing and toss the salad until mixed.
