Steak Caesar Salad Recipe

This easily elevated classic is served in a wide range of establishments. Whether it's offered as a starter, side, or entrée, a bed of Romain lettuce with Caesar dressing, croutons, and grated cheese is a common menu staple—until you steak it up. Seasoned strips of Steak-EZE® Fast BreakAway® Beef help power up a basic salad and increase check average with minimal BOH time/effort.

Ingredients

AMOUNTMAIN INGREDIENTS
8 oz.The Original Steak-EZE® Revolutionary Fast BreakAway® Sirloin Beef Flat Steak, Non Marinated, 4 oz
1 Tbsp.Canola Or Other Neutral Oil
1 Ea.Large head of Romaine lettuce, torn
1/2 CupFresh Grated Parmesan
1 CupCroutons
2 Filets               Anchovy - Chopped
1 Ea.Garlic Clove - Finely chopped
1 EaEgg Yolk
2 Tbsp.Lemon Juice
1 Tsp.Dijon Mustard
1/3 CupOlive Oil

 

Directions

Step 1: Heat one tablespoon of canola oil in a medium skillet over medium-high heat.

Step 2: Add Steak-EZE® Marinated Fast BreakAway® Sirloin Beef Slices and sear, about one minute per side, then break into pieces using a spatula or wooden spoon.

Step 3: Remove from heat.

Step 4: For the salad dressing, begin by mashing the anchovy and garlic together in a mortar and pestle until it forms a smooth paste. In a small bowl, whisk egg yolk, lemon juice and mustard.

Step 5: Slowly incorporate ⅓ cup of olive oil, making sure to keep whisking the whole time.

Step 6: Add anchovy mixture and ¼ cup of finely grated Parmesan.

Step 7: Toss well and top with steak, croutons, and shaved Parmesan.
