Plum-Teriyaki Beef with Fried Rice

Tender beef slices stir-fried with strips of red bell pepper, broccoli florets, freshly pureed plum and teriyaki sauce. Served over Steak & Pineapple Fried Rice.

Plum-Teriyaki Beef

4 oz.The Original Steak-EZE® Thick Cut BreakAway® UC Sirloin Beef Steak, Lightly Marinated, 4 oz.  (Code #: 10000004385) 
4 oz.Steak & Pineapple Fried Rice (See Sub-recipe below) 
3/4 oz.Soybean Oil 
1 oz.Red Bell Pepper Strips, sauteed 
2 oz.Broccoli, blanched, florets 

2 oz.

Plum-Teriyaki Sauce 
Garnish Toasted Sesame Seeds 

Steak & Pineapple Fried Rice

32 oz. White or Brown Rice, Cooked (24 hrs. in cooler) 
6 oz. The Original Steak-EZE® BreakAway® Sirloin Beef Steak, Non-Marinated, 6 oz, 12 Lbs (Code: 10000060001) 
1 oz. Soybean Oil 
3 oz. Lite Soy Sauce 
1 oz. Carrots, small diced 
2 oz. Red peppers, medium dice 
2 oz. Red onion, small dice 
2 oz. Pineapple, fresh, grilled, medium dice (canned is a good option) 
2 oz. Water chestnuts, chopped 
1 ½ Tbsp. Scallion, curls 
optional Mirin 
Directions

Plum-Teriyaki Beef with Fried Rice

Directions:

  1. In a hot wok or large sauté pan, place the soybean oil and coat the bottom of the hot pan. Cook beef until cooked completely through. Add in red pepper strips and broccoli florets and cook for an additional 1 min.

  2. Add in the Plum-Teriyaki sauce and heat until all ingredients are warmed throughout.

  3. On an entrée plate, deposit 5 oz. of fried rice. Suggest placing and slight pressing down to increase plate coverage.

  4. Top with Plum-Teriyaki Beef with vegetables.

  5. Garnish with toasted sesame seeds.
     

CREATIVE POSSIBILITIES: 
A light drizzle of a toasted sesame mayo, sriracha mayo or a fried egg are outstanding additions to the dish.

 

Steak & Pineapple Fried Rice

Directions:

  1. In a hot wok or large sauté pan, place the soybean oil and coat the bottom of the hot pan. Add in the carrots, water chestnuts, onions, red peppers, and pineapple. Cook for 5-7 min. or until all ingredients are warmed through. The onions should be lightly sautéed in color.

  2. Add in the rice, cooked steak and using a folding motion, fold in the cooked rice, not overworking it.

  3. Drizzle lite soy sauce and mirin.

  4. Garnish with scallion curls.
