Braised Mole Short Ribs Recipe

Mole Sauce

2 EA. California (dried Anaheim) Chilies
2 EA. Guajillo Chilies
2 EA. Pasilla Chilies
1 EA. Ancho Chile
1 EA. Yellow Onion - Chopped
4 EA. Garlic Cloves - Smashed
1/3 CUP Raisins
1/3 CUP Salted Dry Roasted Peanuts
1 CUP Bolillo (Mexican Dinner Rolls) - Cubed
1/4 CUP Sesame Seeds
4 CUPS Hot Chicken Stock
1 1/2 OZ. Mexican Chocolate - Coarsely Chopped
1 1/2 TSP. Kosher Salt
  
Directions

Step 1: Preheat convection oven to 275°F.

Step 2: Pat the ribs dry and season with salt and pepper. Heat oil over medium-high heat in a thick bottom braising pot or sauté pan. Brown each rib on all sides and set aside in a 4” hotel pan.

Step 3: Pour reserved mole sauce over short ribs, submerging them. Cover hotel pan with foil and cook for 3 1/2 to 4 hours or until ribs are fork tender.

Step 4: Remove braising liquid and strain. Remove the excess fat from it. Reserve juices for serving and leave some juice in the pan for short ribs to rest in.

Mole Sauce

Step 1: Remove stems and seeds from chilies; tear into large, evenly sized pieces.

Step 2: Heat 1/4 cup oil in large sauté pan. Toast chili until blistered; remove from pan with serrated spoon and place in a blender. Lightly brown onions and garlic; remove from pan and place in blender. Individually toast raisins, peanuts, bolillo and sesame seeds; add each to blender.

Step 3: Add stock, chocolate and 1 1/2 teaspoons salt to ingredients in blender. Place lid on blender; process mixture for 2 minutes.

Step 4: Strain mixture to remove any large pieces in mole. For optimal flavor, simmer mole over medium-low heat to combine the complex flavors together. Cover and set aside
