Crispy Chicken Breakfast Tacos Recipe

Colorful and crispy with just the right amount of heat. Flavorful, juicy Tyson® Mini Chicken Bites served on a warm, soft corn tortilla and topped with scrambled eggs, spicy salsa verde, fresh pico de gallo and aged cotija cheese. Garnish with fresh cilantro.

4 oz.Tyson® Mini Chicken Bites
3 ea.Soft Corn Tortilla
2 oz.Liquid Egg
1 oz.Salsa Verde - Prepared
1 oz.Pico de Gallo - Prepared
2 tsp.Crumbled Cotija
1 ea.Cilantro Sprigs (2-3 leaves with stem)

Directions

Step 1: Cook Tyson® Mini Chicken Bites in 350ºF fryer for 60-90 seconds or until internal temperature reaches 160ºF.

Step 2: Hold hot for service.

Step 3: Cook the eggs in a non-stick pan over medium heat, stirring occasionally until they are cooked through and scrambled soft.

Step 4: Hold hot for service. 

Step 5: Place 1 oz. of scrambled eggs in the bottom of each tortilla.  Split ingredients evenly across three tacos.

Step 6: Top eggs with 1 Tbsp. Salsa Verde per taco.

Step 7: Top with 2 oz. Tyson® Mini Chicken Bites per tortilla.

Step 8: Garnish each taco with 1 Tbsp. Pico de Gallo, 1 tsp. Cotija cheese, and a cilantro sprig.

Step 9: Serve hot.
