A fresh take on a Mediterranean classic! Lightly breaded Tyson® Mini Chicken Bites mixed with sweet cherry tomatoes, rich Kalamata olives, crunchy cucumber, red onion, sliced pepperoncini and crumbled feta cheese on a bed of baby arugula. Drizzle with bright and tangy Greek dressing.

2 oz. | Feta Cheese - Crumbled |
5 oz. | Tyson® Mini Chicken Bites |
2 Tbsp. | Greek Dressing - Prepared |
Step 1: Cook Tyson® Mini Chicken Bites in 350ºF fryer for 60-90 seconds or until internal temperature reaches 160ºF.
Step 2: Hold hot for service.
Step 3: Cut and prepare all ingredients for salad.
Step 4: Hold cold for service.
Step 5: Place 5 oz. of baby Arugula spread evenly in a large salad bowl.
Step 6: Plate halved Cherry Tomatoes, whole Kalamata olives, sliced Cucumber, sliced Red Onion, whole Pepperoncini, crumbled Feta Cheese in separate groups around the edges, leaving the center open but filling the edges all the way around.
Step 7: Top with cooked Tyson® Mini Chicken Bites in the center of the salad.
Step 8: Serve dressing in a ramekin on the side.
