The Chicago Beef 'n Bear Pizza Recipe

A large pizza topped with Italian beef cream sauce, mozzarella cheese, sweet Italian peppers, Original Philly® Seasoned Sliced Beef, Hillshire Farm® Old World Specialties® Italian-Style Sausage, and Italian beef jus with Chicago-style giardiniera, celery poppy seed mix and cracked black pepper.

6 oz.Italian Beef Cream Sauce (Sub-Recipe)
8 oz.Shredded Mozzarella Cheese 
6 oz.Sweet Italian Peppers, Sliced
8 oz.Original Philly® Fully Cooked Seasoned Sliced Beef 4/2.5 LB
8 oz.Hillshire Farm® Old World Specialties® Italian-Style Sausage, Large Chunk, 14 Pieces Per Ounces
4 oz.Italian Beef Jus (Sub-Recipe)
3 oz.Chicago-Style Giardiniera Relish (Commercially Available)
1 tbsp.Celery Poppy Seed Mix
1 tsp.Cracked Black Pepper

Italian Beef Cream Sauce

Yield: 42 oz.

40 oz.White Garlic Pizza Sauce, Prepared (Commercially Available)
1 1/2 oz.Italian Beef Base, Prepared 

Italian Beef Jus

Yield: 14 oz.

12 oz.Room Temp Water 
1 1/2 oz.Italian Beef Base, Prepared 
1/2 oz.Demi Glace Base, Prepared 
Directions

Step 1: Preheat impinger oven to 475°F.

Step 2: Remove pizza dough from freezer, cover tightly and slack in cooler prior to use. 

Step 3: Remove pizza dough from cooler and place onto a clean work surface.

Step 4: Spread Italian beef cream sauce evenly over crust from edge to edge.

Step 5: Top Italian beef cream sauce with shredded mozzarella cheese.

Step 6: Place Italian sweet peppers, sliced beef and italian-style sausage on top of cheese evenly around entire pizza.

Step 7: Place prepared pizza onto a pizza screen and place it into the impinger oven.

Step 8: Cook for approximately 6 minutes and 15 seconds.

Step 9: Remove from oven and place pizza onto a cutting board.

Step 10: Cut pizza into slices and sprinkle the entire pizza with beef jus.

Step 11: Top with giardiniera, celery poppy seed mix and fresh cracked pepper.

Step 12: Serve as needed.

Italian Beef Cream Sauce

Step 1: Place all the ingredients into a mixing bowl. 

Step 2: Mix all ingredients to well combined. 

Step 3: Remove from mixing bowl and use as needed. 

 

Italian Beef Jus

Step 1: Place all ingredients into a pot.

Step 2: Bring all ingredients to a boil.

Step 3: Once brought to a boil, remove from heat. 

Step 4: Allow jus to cool then remove from pot and use as needed.
