Indian Corn Relish

3 Tbsp. | Lime Juice |

Avocado Mint Yogurt

5 oz. | Simplot Harvest Fresh™ Avocados Chunky Avocado Pulp, Thawed |
5 oz. | Greek Yogurt |
3 Tbsp. | Mint - Fresh Chopped |
3 Tbsp. | Scallion - Thin Sliced |
Step 1: Preheat oven to 350°F.
Step 2: Place frozen filets on a parchment lined baking sheet.
Step 3: Heat for 14 to 17 minutes.
Step 4: Hold in warmer until ready to serve.
To serve:
Step 1: Open buns on prep service and spread with 2 Tbsp. of avocado mint spread on the bottom bun.
Step 2: Top bottom bun with the spicy fillet.
Step 3: Top the filet with 1 oz. of the corn relish and top bun.
Step 4: Serve warm.
Indian Corn Relish
Step 1: Heat roasted corn according to package instructions.
Step 2: Cool corn before combining in bowl with extra virgin olivfe oil, lime juice and masala spice.
Step 3: Cover and hold cold until serving.
Avocado Mint Yogurt
Step 1: Mix avocado pulp, yogurt, mint, and scallions.
Step 2: Cover and hold cold until serving.
