Directions

Step 1: Drain marinated beef and reserve marinade on the side.

Step 2: Add 1 Tbsp. cooking oil to a sauté pan or flat top griddle on high heat and sear beef, moving frequently to avoid burning. Deglaze pan with 2 Tbsp. of reserved marinade and remove pan from heat. Hold warm.

Step 3: Add 1 Tbsp. cooking oil to a sauté pan or flat top griddle on high heat. Add scallion whites, garlic and ginger. Cook until aromatic, then add the pre-cooked rice to the pan, stirring frequently.

Step 4: When rice begins to crisp, add the carrot, bell pepper, and mushroom to the pan. Continue cooking for another 1-2 minutes until vegetables have softened but are not cooked all the way through (the vegetables should still look vibrant, not translucent).

Step 5: Plate the fried rice, then top with cooked beef. Drizzle Yum Yum sauce over entire bowl. Garish with toasted sesame seeds and scallion greens.
