Al Pastor Inspired Chorizo Taco Recipe

Ingredients

SERVES: 2 TACOS

2 ea.4.5-inch Flour Tortillas
4 oz.Hillshire Farm® All Natural Fully Cooked Pork Chorizo Crumbles
4 Tbsp.Pineapple-serrano salsa

 

Pineapple – Serrano Salsa Ingredients

2 c. Pineapple, fresh, peeled, cored, and diced ¼-inch 
4 ea. Serrano chilies, stemmed, seeded and diced ¼-inch  
¼ c. Red bell pepper, stemmed, seeded and diced ¼-inch 
2 oz. Lime juice 
¼ c. Red onion, peeled and diced 1/8-inch 
2 Tbsp. Fresh cilantro, rough chopped 
1 tsp. Kosher salt  
Directions
  1. Make pineapple-serrano salsa: Mix to combine. Chill until ready to serve.
  2. Heat the chorizo in a sauté pan, tossing until hot. Hold warm and covered.
  3. Heat the tortillas on a hot griddle and place on serving plate.
  4. Add 2-oz. portions of the chorizo to each tortilla.
  5. Top each taco with 2 Tbsp. of salsa.
  6. Serve immediately.
