Roasted Peach and Bourbon Pesto Tomahawk Recipe

2 TBSP.  Olive Oil 
1 TBSP. Kosher Salt 
2 TSP. Black Pepper 
2 TBSP.Butter (for cast-iron skillet/oven cooking method)

Pesto

2 EA. Fresh Peaches 
4 OZ. Bourbon 
2 OZ. Basil 
1/4 CUP  Olive Oil 
2 TBSP. Parmesan 
2 TSP. Salt 
1 TSP. Pepper 
2 EA. Garlic Cloves 
Directions

Grill Directions -

Step 1. In a medium mixing bowl, combine olive oil, salt and pepper and coat the tomahawk. 

Step 2. Prepare charcoal or gas grill for medium heat.

Step 3. Grill 10 to 12 minutes per side until an internal temperature of 145°F is reached. 

Step 4. While grilling the tomahawk, cut the peaches in half and grill until soft and caramelized.  

Step 5. Transfer peaches to the blender with the remaining pesto ingredients and prepare as instructed in the sub-recipe.

Step 6. Move tomahawk from grill to service plate and allow to rest for 10 minutes. Pair with pesto and serve.

Alternate Cooking Method (Cast-Iron Skillet/Oven):

Step 1. In a medium mixing bowl, combine olive oil, salt and pepper and coat the tomahawk. Set aside.   

Step 3. Prepare your oven by preheating to 325°F and preheating a cast-iron skillet for 5 to 8 minutes on medium heat until smoking.

Step 4. Place tomahawk in pre-heated cast-iron skillet for 5 minutes per side and baste with 2 tablespoons of butter.

Step 5. Add halved peaches and bourbon to the cast-iron skillet with tomahawk, transfer to oven for 10 minutes or until the internal temperature of tomahawk reaches 145°F.   

Step 6. Move tomahawk to service plate and allow to rest for 10 minutes.

Step 7. While tomahawk rests, transfer the peaches and pan drippings to the blender with the remaining pesto ingredients and prepare as instructed in the sub-recipe.

Step 8. Pair tomahawk with pesto and serve.
