Rosé-Souvlaki Pork Tomahawk Recipe

This easy overnight marinade packs in the flavor on your pork tomahawks to create a standout dish for your menu. Combine rosé wine, olive oil, fresh herbs and roasted garlic the night before, and let your pork soak up all that flavor. 

Ingredients

YIELD: 1 EACH

  AMOUNTMAIN INGREDIENTS 
1 EA.
Pork Tomahawk 
Marinade 
2 TBSP.  Olive Oil 
12 CUPS Rosé Wine 
2 EA. Lemon Zest 
8 EA. Roasted Garlic 
2 TBSP. Fresh Oregano 
1 TBSP. Fresh Rosemary 
2 TSP. Paprika 
1 TBSP. Kosher Salt 
2 TSP. Black Pepper 
Directions

Step 1: In large mixing bowl, combine marinade ingredients. Coat tomahawk with marinade, place in airtight container and refrigerate overnight.

Step 2: Prepare charcoal or gas grill for medium heat.

Step 3: Grill tomahawk 10 to 12 minutes per side until internal temperature reaches 145°F.

Step 4: Remove from heat. Let rest for 10 minutes, then plate and serve.

Alternate Cooking Method

Cast Iron/Oven

Step 1: In large mixing bowl, combine marinade ingredients. Coat tomahawk with marinade, place in airtight container and refrigerate overnight.

Step 2: Preheat oven to 325°F.

Step 3: Preheat the cast-iron pan for 5 to 8 minutes on medium heat until smoking. 

Step 4: Place tomahawk in cast-iron pan for 5 minutes on each side and baste with 2 tablespoons of butter. Transfer to oven for 10 minutes or until the internal temperature reaches 145°F.

Step 5: Remove from heat. Let rest for 10 minutes, then plate and serve.
