Plate this pleasing and unpretentious roasted pork tenderloin for the perfect dinner dish. Whip up a simple honey mustard sauce while your protein roasts and then coat it for a tangy, juicy and flavorful center-plate star.

1 EA. | Pork Tenderloin, Trimmed (about 18 OZ.) |
1 TSP. | Olive Oil |
1-1/2 TSP. | Kosher Salt |
1/2 TSP. | Fresh Cracked Black Pepper |
2 TSP. | Dijon Mustard |
2 TSP. | Honey |
1 TSP. | Fresh Thyme, Chopped |
1/2 TSP. | Fresh Rosemary, Chopped |
2 TSP. | Flat Leaf Parsley, Chopped |
Step 1. Preheat oven to 350°F and prepare a roasting pan with a rack.
Step 2. Coat the tenderloin with olive oil and season with salt and pepper. In a large hot sauté pan, sear the tenderloin on all sides over medium-high heat
Step 3. Place the tenderloin in an oven pan with a rack and roast until an internal temperature of 145°F to 150°F is reached, approximately 15 minutes. Remove from oven and allow to rest for 10 to 15 minutes.
Step 4. While the roast is resting, combine the Dijon, honey and herbs. Place sauce on top of tenderloin and serve.
Tip: Cooking with medallions? Grill for 3 to 5 minutes over medium heat, turning the cuts after about 2 to 3 minutes. Pull off the heat when each cut of pork hits 145° with a cooking thermometer and let rest for about 10 to 15 minutes.
