This smoked baby back rib recipe will make your establishment the go-to place for ribs. All you need is baby back ribs, tomato paste, brown sugar, chili powder, cumin, garlic, onion powder, and salt. These simple, classic flavors meld perfectly with the tomato paste to create a saucy base for the smoky ribs. Perfect for indirect cooking or direct cooking, depending on your needs

2 TBSP | Brown Sugar |
2 TSP | Chili Powder |

2 TSP | Kosher Salt |
Step 1: Pre-heat your smoker to 250°F. Note: You can use other wood varieties, but for best results use well-cured post oak.
Step 2: Combine the tomato paste, brown sugar, chili powder, cumin, garlic powder, onion powder and salt in a mixing bowl.
Step 3: Remove the membrane from the bone side of the ribs. Rub the tomato mixture all over the ribs.
Step 4: Place rubbed ribs meat side up on in a single layer on cooking racks in smoker. Cook for about 3 hours or until internal temperature reaches 195°F – 205°F.
Step 5: Remove from grill. Let stand for 5 minutes and cut between bones into servings to plate and serve immediately.
