Step 1: Cook Wright® Brand Naturally Hickory Smoked Extra Extra Thick Sliced Steak Cut Bacon, Bulk, 15 Lbs, 2 Slices/Inch, Gas Flushed over medium heat on a grill until internal temperature reaches 165°F and crispy and has grill marks. Cut slices in half and hold hot.
Step 2: In a wide bowl or coupe, plate cheesy grits.
Step 3: Top grits with smoky tomato gravy.
Step 4: Plate shrimp and slices of grilled Wright® Brand Naturally Hickory Smoked Extra Extra Thick Sliced Steak Cut Bacon, Bulk, 15 Lbs, 2 Slices/Inch, Gas Flushed shingled over tomato gravy.
Step 5: Garnish with fresh herbs and serve hot.
Smoky Tomato Gravy
Step 1: Over medium heat in a medium sauce pot, sweat the onions and garlic in butter until soft and translucent.
Step 2: Add bell peppers and continue to cook until they are tender as well.
Step 3: Add canned tomatoes and chipotles. Bring to a simmer, season with salt and pepper.
Step 4: Hold hot for service.
Cheesy Grits
Step 1: Over high heat in a medium sauce pot, bring water or stock to a simmer.
Step 2: Whisk in dry grits and cook according to package instructions.
Step 3: Once grits are cooked, fold in cream cheese and shredded cheddar cheese.
Step 4: Season with salt and pepper. Hold hot for service.
