Asian Pear Slaw

Yield: 16 OZ.

AMOUNTMAIN INGREDIENTS
2 cupsAsian Pears, Julienned 
1/4 cupFresh Chopped Cilantro
1/4 cupFresh Scallions, Bias Cut
1 tbsp.Lemon Juice
1 tsp.Sesame Oil

Thai Chili Hollandaise

Yield: 10 OZ.

AMOUNTMAIN INGREDIENTS
8 oz.Clarified Unsalted Butter (Commercially Prepared)
5 ea.Fresh Whole Egg Yolks
2 tbsp.Hot Water
1 tbsp.Fresh Squeezed Lemon Juice
2 tbsp.Sweet Thai Chili Glaze (Commercially Prepared)
1/4 tsp.Granulated White Sugar
1/4 tsp.Kosher Salt
Directions

Step 1. Split open steamed bao buns.

Step 2. Place slaw into bao bun.

Step 3. Top with a half slice of Wright® Brand Naturally Hickory Smoked Extra Extra Thick Sliced Steak Cut Bacon,  Bulk, 15 Lbs, 2 Slices/Inch, Gas Flushed.

Step 4. Place an egg on top of each slice of Wright® Brand Naturally Hickory Smoked Extra Extra Thick Sliced Steak Cut Bacon,  Bulk, 15 Lbs, 2 Slices/Inch, Gas Flushed.

Step 5. Plate hollandaise in a ramekin on the side.

Step 6. Serve hot.

Asian Pear Slaw

Step 1.  Mix all ingredients in a bowl and hold cold for service.

Thai Chili Hollandaise

Step 1. Place the butter in heavy saucepan over medium heat until melted and hot. 

Step 2. Add the egg yolks, 1 tablespoon hot water, lemon juice, sweet Thai chili glaze, sugar, and salt to the blender. 

Step 3. Blend for 10 seconds until it is well combined.

Step 4. Keep the blender running on medium high and slowly stream melted hot butter into the mixture.

Step 5. Blend for another 30-45 seconds until emulsified. 

Step 6. If the hollandaise is too thick, slowly drizzle in another tablespoon of hot water and blend until combined.

Step 7. Serve as needed.
