Maple Bacon Lettuce Tomato Recipe

3 ea.Green Leaf Lettuce
2 ea.Beefsteak Tomato, Sliced, 1/4 inch
4 ea.Wright® Brand Naturally Applewood Smoked Regular Sliced Bacon
1 tbsp.Chiptole Maple Glaze (Sub-Recipe 1)
2 tbsp.Spicy Maple Aioli (Sub-Recipe 2)

Chipotle Maple Glaze

Yield: 32 OZ.

AMOUNTMAIN INGREDIENTS
6 CupsMaple Syrup
1 1/2 cupsChipotle puree, prepared
3/4 cupBrown Sugar
3/4 cupDijon Mustard
4 tbsp.Apple Cider Vinegar
2 tbsp.Garlic powder
1 tbsp.Salt
1 tbsp.Black Pepper
Directions

Step 1: Pre heat convection oven to 350°F and lay bacon flat in one layer on a sheet tray with a rack. Cook until crispy.

Step 2: Remove bacon from oven and glaze with spicy maple glaze while cooling.

Step 3: Toast bread and spread aioli on both slices. Plate lettuce on bottom slice, the tomato, and glazed bacon.

Step 4: Finish with top slice and serve fresh.

Sub-Recipe Directions

Chipotle Maple Glaze

Step 1: Mix all ingredients together in a sauce pot and cook over medium low heat. Bring to a low simmer and reduce by 30% or until syrupy and you have 4 qt of final product.

Spicy Maple Ailoli

Step 1: Combine all ingredients in a food processor and blend until smooth. 

Step 2: Hold cold for cold service.

Spicy Maple Aioli
