Swicy Ranch

1 tbsp. | Yellow Mustard |
2 tbsp. | Habanero Hot Sauce - Yellow & Prepeared |
2 cu. | Bread & Butter Pickles - Drained & Chopped |
2 cu. | Canola Oil (Or Any Neutral Oil) |
1 ea. | Ranch Packet - Prepared |
Step 1: Cook filet. Hold hot for service.
Step 2: Cook bacon. Hold hot for service
Step 3: Cut tomato and lettuce. Hold cold for service.
Step 4: Place shredded lettuce on bottom bun and top with slice of tomato.
Step 5: Drizzle sauce over tomato.
Step 6: Place crispy filet on top of tomato and top with bacon folded in half and then a slice of cheese.
Step 7: Top with bun and serve.
Swicy Ranch
Step 1: In a food processor, combine egg yolk, pickling liquid, mustard and hot sauce.
Step 2: With food processor running, slowly drizzle in oil.
Step 3: After all oil has been emulsified, fold in ranch seasoning and chopped pickles.
Step 4: Hold cold for service.
