2 oz.Wright® Brand Naturally Applewood Smoked Regular Sliced Bacon
1 ea.White American Cheese - Sliced
2 oz.Iceberg Lettuce - Shredded
1 ea.Tomato - Sliced
1 tbsp.Swicy Ranch (Sub-Recipe)

Swicy Ranch

AMOUNTSUB-RECIPE INGREDIENTS
3 ea./3 oz.Egg Yolk - Fresh or Pasteurized Frozen
4 oz.Bread & Butter Pickling Liquid
1 tbsp.Yellow Mustard
2 tbsp.Habanero Hot Sauce - Yellow & Prepeared
2 cu.Bread & Butter Pickles - Drained & Chopped
2 cu.Canola Oil  (Or Any Neutral Oil)
1 ea.Ranch Packet - Prepared
Directions

Step 1: Cook filet. Hold hot for service.

Step 2: Cook bacon. Hold hot for service

Step 3: Cut tomato and lettuce. Hold cold for service.

Step 4: Place shredded lettuce on bottom bun and top with slice of tomato.

Step 5: Drizzle sauce over tomato.

Step 6: Place crispy filet on top of tomato and top with bacon folded in half and then a slice of cheese. 

Step 7: Top with bun and serve.

Swicy Ranch

Step 1: In a food processor, combine egg yolk, pickling liquid, mustard and hot sauce.

Step 2: With food processor running, slowly drizzle in oil.

Step 3: After all oil has been emulsified, fold in ranch seasoning and chopped pickles.

Step 4: Hold cold for service.
