Step 1. Place warm fried sope onto a clean work surface and fill sope with refried black beans.
Step 2. Place Hillshire Farm® All Natural* Fully Cooked Pork Chorizo Crumbles over beans and top with poached egg.
Step 3. Garnish with pico de gallo, a drizzle of jalapeno crema and cotija cheese.
Refried Black Beans
Step 1. In a sauté pan over medium heat, sweat the onions and garlic in bacon fat.
Step 2. Drain the canned beans. Add half of the beans to the pan, warm through and mash with the back of a fork or spoon.
Step 3. Add the rest of the beans, bring to a simmer.
Step 4. Hold hot for service.
Pico de Gallo
Step 1. Cut all vegetables and herbs.
Step 2. Combine with salt and lime juice.
Step 3. Hold cold for service.
Jalapeno Crema
Step 1. Pulse all ingredients together in a food processor until smooth and hold cold for service.
