Chicken and Avocado Bruschetta Recipe

Rich, creamy avocado is combined with Tyson® All Natural,* Low Sodium, Fully Cooked, Diced Chicken and other ingredients rich in antioxidants such as citrus, olive oil and garlic, in a satisfying, protein-centric snack.

1 case, thawedTyson® All Natural,* Low Sodium, Fully Cooked, Reverse Blend, 1/2" Diced Chicken
3/4 cupsBasil leaves - Chopped
1 CupExtra Virgin Olive Oil
3 lemonsLemon Juice - Fresh Squeezed
3/4 cupsLemon Zest - Grated
20 thick slicesWhole Grain Sourdough
2 ea.Bay Leaves
4 ea.Avocado Ripe & Diced
1 bunchSpring Onion - Finely Chopped
5 ea.Garlic Clove - Halved
10 ea.Black Peppercorns
to tasteFreshly Ground Pepper
Directions

Step 1: Half-fill a medium saucepan with water and add the bay leaf and peppercorns. Cover and simmer 5 minutes.

Step 2: Add Tyson® All Natural,* Low Sodium, Fully Cooked, Diced Chicken, cover and simmer 10 minutes or until just cooked.

Step 3: Remove chicken from water and transfer to a plate, cover loosely with plastic wrap and set aside in refrigerator to cool 10 minutes.

Step 4: Whisk 1 tablespoon oil, lemon zest, lemon juice and pepper to taste in a large bowl.

Step 5: Add in diced chicken and add to bowl with avocado, spring onion and basil leaves.

Step 6: Combine gently with a spoon.

Step 7: Preheat grill (broiler) to high.

Step 8: Rub both sides of bread thoroughly with garlic. Drizzle over remaining oil.

Step 9: Toast bread under grill 1-2 minutes each side until lightly browned.

Step 10: Spoon chicken mixture over toast and serve.
