3/4 cups | Basil leaves - Chopped |
1 Cup | Extra Virgin Olive Oil |
3 lemons | Lemon Juice - Fresh Squeezed |
3/4 cups | Lemon Zest - Grated |
20 thick slices | Whole Grain Sourdough |
2 ea. | Bay Leaves |
4 ea. | Avocado Ripe & Diced |
1 bunch | Spring Onion - Finely Chopped |
5 ea. | Garlic Clove - Halved |
10 ea. | Black Peppercorns |
to taste | Freshly Ground Pepper |
Step 1: Half-fill a medium saucepan with water and add the bay leaf and peppercorns. Cover and simmer 5 minutes.
Step 2: Add Tyson® All Natural,* Low Sodium, Fully Cooked, Diced Chicken, cover and simmer 10 minutes or until just cooked.
Step 3: Remove chicken from water and transfer to a plate, cover loosely with plastic wrap and set aside in refrigerator to cool 10 minutes.
Step 4: Whisk 1 tablespoon oil, lemon zest, lemon juice and pepper to taste in a large bowl.
Step 5: Add in diced chicken and add to bowl with avocado, spring onion and basil leaves.
Step 6: Combine gently with a spoon.
Step 7: Preheat grill (broiler) to high.
Step 8: Rub both sides of bread thoroughly with garlic. Drizzle over remaining oil.
Step 9: Toast bread under grill 1-2 minutes each side until lightly browned.
Step 10: Spoon chicken mixture over toast and serve.
