Step 1. Cover the crust tightly and slack in the refrigerator between 32° and 36°F prior to use.
Step 2. Cover the jalapeño pepperoni completely and slack in the refrigerator between 32° and 36°F prior to use.
Step 3. Brush the crust with olive oil just prior to assembling the pizza.
Step 4. Assemble each pizza: Spread 6 ounces of sauce evenly over crust. Top with 5 ounces of pizza cheese blend, 3½ ounces of pepperoni, 1 ounce of additional pizza cheese blend, and 1 ounce of fresh jalapeño slices.
Step 5. Bake uncovered, on a lightly oiled pan dusted with cornmeal or on a mesh pizza screen, in a preheated conventional oven at 450°F for 8 to 10 minutes or until golden and bubbly.
Step 6. Remove from oven and slice into 8 portions.
Step 7. Serve with grated Parmesan cheese and crushed red pepper.
