Maple-Mustard Glazed St. Louis-Style Spareribs Recipe

These St. Louis-Style spareribs offer a unique and warm spin on barbecue sauce. Whip up this sweet and umami sauce with maple syrup, brown sugar and coarse grain mustard while your spareribs cook for just an hour and a half and glaze them in the last 15 minutes.

 You’ll get a lunch or dinner menu item that will comfort your customers. They won’t be able to stop thinking about these delicious and tender ribs and maple mustard BBQ sauce.

Ingredients

YIELD: 1 RACK

AMOUNTMAIN INGREDIENTS
1 RACK St Louis Style Pork Spareribs, cut crosswise into 3 to 4 rib pieces
3/4 Cup Maple Syrup
3/4 Cup Coarse Grain Mustard
1/3 Cup Packed Dark Brown Sugar
2 TSP Hot Sauce
2 TSP Soy Sauce

Step 1: Pre-heat your smoker to 250°F. 

Step 2: Pull off membrane from bone side of ribs. In a small bowl, combine glaze ingredient. Cover and set aside. Prepare glaze.

Step 3: Place spareribs meat side up in a single layer on cooking racks in smoker.  Smoke ribs for 4 hours or until internal temperature reaches 195°F-205°F.   Start lightly glazing the ribs after the first 2 hours.

Step 4:  During the last 15 minutes, brush heavily with glaze.

Step 5:  Remove from grill, plate and serve immediately.

Note:  You can follow the same time and temperature to cook these ribs in the oven.  They just won’t have a smoky flavor.
