Mediterranean Lemon Chicken Bowl Recipe

Bright flavors. Craveable textures. Serve hearty couscous topped with Tyson Red Label® Golden Crispy Boneless Wings, cucumbers, tomato and red onion salad, olives, snap peas, feta cheese and lemon wedges. Served with a side of Greek-style yogurt sprinkled with paprika.

6 Oz.Moroccan Couscous (Commercially Prepared)
3 Oz.Tomato & Onion Sala (Sub-Recipe)
6 Ea.Habanero Peppers -Sliced 1/4 inch
8 Ea.Tyson Red Label® Uncooked Breaded Golden Crispy Chicken Breast Chunk Fritters
5 Ea.Italian Parsley Sprig
2 Ea.Fresh English Cucumber - Sliced in Ribbons
2 Ea.Fresh Sliced Lemon - Halfmoon 1/4 inch
1 Tbsp.Crumbled Feta Cheese 
2 Oz.Greek Yogurt Sauce (Commercially Prepared)

Sub-Recipe Ingredients

Tomato & Onion Salad

YIELD: 1 SERVING

AMOUNTMAIN INGREDIENTS
2 Oz.Cherry Tomatoes, Sliced, Halves
1 Oz.Fresh, Sliced Red Onion - Julienned
1/2 Oz.Sliced Kalamata Olives - Halves
1/2 Oz.Snap Green Peas - Halves
1 tsp.Extra Virgin Olive Oil
1/4 tsp.Kosher Salt

 

Directions

Step 1: Pre-heat deep fryer at 350°F.

Step 2: Place Tyson Red Label® Uncooked  Breaded Golden Crispy Chicken Breast Chunk Fritters into a fryer basket and submerge in oil.

Step 3: Cook for 3 minutes and internal temperature reaches 165°F.

Step 4: Remove from deep fryer and place onto a prepared wire rack at 135°F.

Step 5: Reserve

To assemble:

Step 1: Place Moroccan couscous into the serving bowl.

Step 2: Working clockwise, place tomato and onion salad towards the up of the bowl.

Step 3: Place the sliced habaneros on the side of the tomato and onion salad.

Step 4: Remove Tyson Red Label® Uncooked Breaded Golden Crispy Chicken Breast Chunk Fritters from wire rack and place them next to the sliced habaneros.

Step 5: Place parsley sprigs next to the Tyson Red Label® Uncooked Breaded Golden Crispy Chicken Breast Chunk Fritters.

Step 6: Place cucumber ribbons next to the parsley sprigs.

Step 7: Place lemon slices and feta cheese into the center of the dish.

Step 8: Drizzle entire dish with Greek yogurt sauce.

Step 9: Serve as needed.

Step 1: Place all ingredients into a mixing bowl.

Step 2: Gently mix all ingredients together.

Step 3: Remove from mixing bowl.

Step 4: Serve as needed.
