Richardo’s Chorizo & Sweet Potato Bowl Recipe

A bold-flavored bowl that’s perfect to enjoy any time of day. The dish includes Hillshire Farm® All Natural* Fully Cooked Pork Chorizo Crumbles, roasted sweet potatoes, baby spinach, arugula, scrambled eggs, and finished with guajillo salsa and crispy tortilla strips.

AMOUNTMAIN INGREDIENTS
4 oz.Hillshire Farm® All Natural* Fully Cooked Pork Chorizo Crumbles
4 oz.Roasted sweet potatoes, diced ​
2 oz.Arugula & spinach leaves (50/50) 
1 eggEggs, fried, folded
1 1/2 oz.Guajillo salsa 
3/4 oz.Roasted red peppers, diced ​
1/2 cupTortilla strips ​
1 to 2 Tbsp.Cilantro & queso fresco mixture  
Directions
Step. 1. Cook the Hillshire Farm® All Natural* Fully Cooked Pork Chorizo Crumbles according to the directions on the box. Reserve hot and covered.

Step. 2. Place the roasted sweet potatoes in a shallow bowl and top with the baby arugula and spinach leaves.

Step. 3. Top sweet potatoes and greens with a freshly fried egg.

Step. 5. Drizzle the bowl with a generous amount of guajillo salsa and add diced roasted red peppers.

Step. 6. In a small pile in the center, place the tortilla strips. Garnish the entire bowl with the cilantro & queso fresco mixture.
