Chorizo Torta Recipe

Take your menu down the streets of Mexico with this authentic chorizo torta featuring Aidells® Fully Cooked Smoked Chorizo Chicken Sausage Links with creamy fresh sliced avocado, smooth refried black bean spread, flame roasted peppers and onions, drizzled with cilantro crema and cotija cheese served between two sliced of toasted bolillo bread.

1 Ea.Aidells® Fully Cooked Smoked Chorizo Chicken Sausage Links, 4 oz, 64 Links per Case, 16 Lbs, Thawed
1 Ea.Bread, Roll, Bolillo & Torta
1 Tbsp.Unsalted Butter - Softened
3 Oz.Refried Black Beans - Spread Warm
2 Oz.Flame Peppers Roasted Peppers & Onions, Warm (Commercially Available)
5 Ea..Fresh Pitted & Sliced Avocado, 1/4 in.
1 1/2 Oz.Cilantro Crema (Sub-Recipe)
1 Tbsp.Crumbled Cheese Cotija

Sub-Recipe Ingredients

Cilantro Crema

12 Oz.Cream, Sour, Prepared
2 Tbsp.Cilantro, Fresh, Chopped
1 Tbsp.Juice, Lime, Fresh, Squeezed
1/4 tsp.Salt, Kosher

 

Directions

Step 1: Preheat flat top grill to 350°F.

Step 2: Place the Aidells® Fully Cooked Smoked Chorizo Chicken Sausage Link onto a clean cutting board.

Step 3: Using knife, slice the Aidells® Fully Cooked Smoked Chorizo Chicken Sausage Link in half, creating two equal half size pieces.

Step 4: Place oil onto the pre-heated flat top grill.

Step 5: Place the thawed Aidells® Fully Cooked Smoked Chorizo Chicken Sausage Link onto the flat-top grill.

Step 6: Sear on both sides and cook to an internal temperature of 165°F.

Step 7: Remove from flat-top grill and reserve.

Step 8: Next, spread butter across each side of the bolillo rolls and place onto flat-top grill to toast rolls.

Step 9: Remove from flat-top grill and spread warm refried black beans across the bottom half of the entire bolillo roll.

Step 10: Spread the fire roasted peppers and onions on top of the refried black beans.

Step 11: Lay slices of avocado across the bolillo roll on top of the fire roasted peppers and onions.

Step 12: Place the cooked Aidells® Fully Cooked Smoked Chorizo Chicken Sausage Link on top of the sliced avocado.

Step 13: Drizzle cilantro crema over entire torta.

Step 14: Sprinkle with cotija cheese and place the top bun on top to close the torta.

Step 15: Serve as needed.

Step 1: Place all ingredients into a food processor.

Step 2: Process all ingredients until smooth.

Step 3: Remove from food processor.

Step 4: Use as needed.

Convection: Cook from frozen. 1. Preheat convection oven to 350°F. 2. Place frozen links on a parchment lined sheet pan. 3. Cook 16-18 minutes or to a minimum internal temperature of at least 165°F, turning halfway for even browning.

Flat Top Grill: Cook from frozen. 1. Preheat flat top grill to 350°F. 2. Place frozen links on grill. 3. Cook 20-22 minutes or to a minimum internal temperature of at least 165°F, turning frequently for even browning.
