Root Vegetable Hash

1 Tbsp.Canola Oil
1 Tbsp.Unsalted Butter - Softened
2 Oz.Fresh Shallot Julienned - 1/4 in.
1 tsp.Fresh Garlic Clove - Peeled & Minced
4 Oz.Orange Sweet Potato Peeled & Diced 1/2 in.
4 Oz.Purple, Peruvian Purple Potato - Diced 1/2 in.
4 Oz.Orange Carrot Peeled & Diced, 1/2 in.
4 Oz.Fresh Green Appled - Skin On & Diced, - 1/2 in.
1/2 tsp.Kosher Salt
1 TbspFlat Leaf Parsley - Chopped
2 tsp.Fresh Thyme - Chopped
1 tsp.Fresh Sage - Chopped

 

Directions

Step 1: Place serving skillet onto a clean work surface.

Step 2: Place the cooked root vegetable hash into the skillet.

Step 3: To one side of the skillet, place 2 sunny side up eggs on top of the root vegetable hash.

Step 4: Place the Aidells® Smoked Chicken and Apple Chicken Sausage Breakfast Links next to the sunny side up eggs.

Step 5: Serve as needed.

Sub-Recipe Directions

Root Vegetable Hash

Step 1: Place a cast-iron skillet on medium heat.

Step 2: Place canola oil and butter into the skillet.

Step 3: Add the shallot, garlic into the skillet and saute for approximately 2 minutes.

Step 4: Add the sweet potato, Peruvian potato and carrot into the skillet and sauté until soft, about 15 minutes. 

Step 5: Add in the diced apple and continue to saute for approximately 2 minutes or until apple has slightly softened.

Step 6: Next, add salt, parsley, thyme, and sage to the skillet and gently toss to combine.

Step 7: Remove from heat and serve as needed.

Convection: Cook from frozen.

Step 1:  Preheat convection oven to 350°F.

Step 2.: Place frozen links on a parchment lined sheet pan.

Step 3: Cook 16-18 minutes or to a minimum internal temperature of at least 165°F, turning halfway for even browning.
