2 slicesJimmy Dean® Fully Cooked Hickory Smoked Regular Bacon Slices
1 ea.Brioche Bun, 4-inch
1 Tbsp.“Swicy” Ranch

Swicy Ranch

Yield:  2 Cups

AmountMAIN INGREDIENTS
3 ea./3 oz.Egg, yolk, fresh or pasteurized frozen
4 oz.Bread & Butter Pickling Liquid
1 Tbsp.Mustard, yellow
2 Tbsp.Habanero Hot Sauce, yellow, prepared
2 cupsBread & Butter Pickles, drained, chopped 
2 cupsOil, canola or another neutral oil
1 ea.Ranch Packet, prepared 
Directions

Step 1:  Convection: Cook from frozen. (Preheat) convection oven to 375°F with fans on full. Place filets on a wire rack that has been sprayed with pan release. Cook filets for 19 - 22 minutes. After cooking, hold in a single layer on a wire rack. Do not stack or shingle.

Step 2: Add swicy ranch on the bottom bun, warm chicken patty, bacon slices and top and serve.

Step 1. In a food processor, combine egg yolk, pickling liquid, mustard and hot sauce.

Step 2. With food processor running, slowly drizzle in oil.

Step 3. After all oil has been emulsified fold in ranch seasoning and chopped pickles.

Step 4. Hold cold for service.
