Fried Green Tomato B.L.T. Recipe

Re-imagine a classic, crowd favorite and make this B.L.T. next level. Fried green tomatoes, arugula leaves, oregano pesto and hearty Wright® Brand Naturally Hickory Smoked Extra Extra Thick Sliced Steak Cut Bacon are layered on whole wheat grain bread slices. It’s a fresh spin on a classic sandwich.

3 to 4 Fried Green Tomatoes (Prepared)
1/4 oz.Baby Arugula Leaves
1 1/2 oz.Oregano Pesto  (Sub-Recipe)

Oregano Pesto Sauce

3 ea.Cloves Garlic - Unpeeled
1/4 cupPine Nuts
2 cups (By Volume)Basil Leaves
1 oz.Feta Cheese Crumbles
1/4 cup (By Volume)Oregano Leaves
2 Tbsp.Lemon Juice
1/4 tsp.Kosher Salt
4 oz.Extra Virgin Olive Oil
Directions

Step 1: Cook the Wright® Brand Naturally Hickory Smoked Extra Extra Thick Sliced Steak Cut Bacon according to the directions on the master case.

Step 2: Reserve Hot & save bacon fat.

Step 3:Toast or griddle the seeded bread slices using the reserved bacon fat. You can also fry your green tomatoes in the bacon fat if you chose.

Step 4: Place a slice of bread on a plate or cutting board. Top with fried green tomatoes and spread with the oregano pesto.

Step 5: Top the pesto with the Wright® Brand Naturally Hickory Smoked Extra Extra Thick Sliced Steak Cut Bacon. Finish with the fresh baby arugula leaves.

Step 6: Place the other slice of toasted/griddled bread on top and insert toothpick or slice.

Step 1: In a large bowl, combine all ingredients

Step 2: Mix until well blended

Step 3: Cover and set aside for later use in assembling the sandwich
